 How to make Laukisabji in one whistle of the cooker

Laukisabji is an easy sabzi which can be made very quickly in the cooker and also very tasty in taste. It can be served with parathas, rotis, chapathis, pooris etc., and it goes very well with rice too.

Gourd Sabzi

Gourd is a versatile vegetable and can be used as main dish, side dish or even as soup. The green tender gourd goes well with every sabzi, so it can be added while making any sabzi or curry and it won’t hurt its taste. Gourd dal sabzi is a delicious Lauki ki Sabji  which takes almost 35 minutes for preparation.



One Whistle Curry

Preparing lauki sabzi is fairly simple but getting it done quickly does take some know-how. Onions, garlic and tomatoes are added for flavor and then potatoes for starch, but lauki is most often cooked on its own. This vegetable takes a lot of time to cook because it has little moisture inside; however, cooking it correctly allows you to get more flavor from your gourd with every bite.

Gourd Recipe

Wash and clean gourd thoroughly. Soak it for 10 minutes. Peel its skin off. Cut them into small pieces and remove seeds from them. Take 3-4 tbsp oil in a pot and add cumin, asafoetida, cinnamon, ginger, green chillies and tomato (cut into 4 pieces). Cook all these for 2 minutes till their colour changes slightly. Add soaked gourd pieces to it with salt, turmeric powder and black pepper powder. Mix well.

Step by step recipe for Laukisabji

As we all know that, sabzi is a very popular Indian dish and nowadays sabzi makes a good side dish for lunch. Today I am going to give you an easy recipe for making Laukisabji which will turn out really tasty. For making lauki sabzi you need two ingredients which are lauki and dal. It is so easy to prepare and it tastes delicious. Here is how you can make Laukisabji:

1) Take 1 cup of soaked moong dal and 2 cups of chopped lauki.

2) Heat oil in a pan on medium heat and add cumin seeds when hot. Add chopped garlic cloves and chopped ginger to it. Saute until raw smell goes off from them. 3) Now add chopped onion to it, mix well until golden brown color appears on them.

 

Ingredients Required For Laukisabji

2 Big Gourds, 4 Big Tomatoes, 5-6 Drumsticks (fresh), One Onion(sliced), Salt & Whole Garam Masala. 1 tsp Dry Ginger Powder (sonth) 1/2 tsp Black Cumin Seeds (shah Jeera) 2 tbsp Cashews(soaked for 10 minutes).

Preparation Tips For Gourd

Gourd is a seasonal vegetable, which you will hardly find in markets. So you have to buy it as soon as it reaches your place. To buy gourd, look for tender and firm ones. It should be heavy for its size. Remove any bad or wrinkled skin with a peeler or knife before use. If it is not fresh enough, discoloration will occur while cooking. Wash and cut into small pieces before cooking.

Procedure To Prepare Gourd

To start with making lauki sabzi, firstly wash it properly and then cut it into big chunks. After cutting it, put these pieces into a pressure cooker and cook them until they turn soft. You can either mash them or leave them whole while cooking. Then add curd (yogurt) and salt and mix them well. In a separate pan, heat ghee (clarified butter) and roast the nuts nicely on low flame till they become brownish but not burnt.
